Preheat your oven to 350°F (175°C).
Wash the bell peppers thoroughly and slice them lengthwise.
Remove:
- Seeds
- White membranes
- Tough inner ribs
Arrange the pepper halves in a large baking dish.
Leave a little space between each pepper to ensure even cooking.
Build the Flavor Base
In a large heavy-bottomed pot or Dutch oven, melt:
- 1½ sticks butter
Add:
- Chopped onion
- Chopped celery or bell pepper
Cook over medium heat for approximately 6–8 minutes, stirring occasionally.

If too thick, add a splash of broth.
