Wash your apples and slice off the top 1/2-inch of each. Using a melon baller or a sharp spoon, carefully scoop out the core and seeds, leaving a wide cavity in the center. Make sure to leave a thick 1/2-inch border at the bottom and sides so the structural walls hold their shape.
In a small bowl, stir together the rolled oats, chopped pecans, melted butter, pure maple syrup, ground cinnamon, and a tiny pinch of salt until the oats are fully hydrated and clump together beautifully.
Pack the oat and pecan mixture tightly into the cavities of both apples, letting the crumble pile up over the top in a neat dome shape.
Preheat your air fryer to 180°C (350°F). Place the stuffed apples upright in the basket. Air fry for 13–15 minutes. The apples are officially ready when their skin wrinkles slightly and a knife easily slides into the side flesh, while the oat topping turns deeply toasted.
Carefully lift the hot stuffed apples out of the basket and place them into serving bowls. Immediately top each with a cold scoop of vanilla ice cream or yogurt. Watch as it melts into the warm, spiced maple juices pool at the bottom!
