In a tiny bowl, vigorously whisk together the balsamic vinegar, honey, and vanilla extract until smooth and thick. Use a pastry brush to paint the mixture generously over the cut side of both peach halves, letting a little bit pool in the central pit cavity.
Preheat your air fryer to 195°C (380°F). Place the peach halves in the basket cut-side up so the sweet juices remain trapped inside the cavity during the bake.
