In a medium bowl, whisk the melted brown butter with the brown sugar and white sugar until completely dissolved. Add the egg yolk and vanilla extract, whisking vigorously until smooth. Fold in the flour and a pinch of salt with a spatula until a soft, rich cookie dough forms.
Grease two small, oven-safe ramekins or silicone baking cups. Divide the dough into two equal portions. Press about 2/3 of each portion into the bottom and up the sides of the cups, creating a deep hollow. Drop 2 large dark chocolate squares into the center, then flatten the remaining dough into small discs to cap the tops, sealing the chocolate inside entirely.
Preheat your air fryer to 180°C (350°F). Place the ramekins inside the basket. Air fry for exactly 6–7 minutes. The secret is timing: you want the edges and top surface to be golden-brown and set into a cookie shell, while the center remains soft, puffed, and underbaked.
Carefully remove the hot ramekins and let them rest for 2 minutes (they will firm up slightly). Run a knife around the edges and invert them onto dessert plates, or serve directly in the cups. Top immediately with a massive scoop of cold vanilla ice cream and pierce the center with a spoon to release the molten chocolate river!
