👩🍳 Detailed Instructions
Bring a small pot of water to a rolling boil. Carefully lower 2 eggs into the water and boil for exactly 6 minutes. Immediately transfer them into a bowl filled with ice water for 5 minutes to halt the cooking process. Carefully peel the eggs and pat them dry. The yolks must remain completely liquid at this stage.
Divide your sausage meat into two equal portions. In a small bowl, mix the sausage meat with the dried sage, garlic powder, salt, and pepper. Flatten each portion into a thin, even circle on a sheet of plastic wrap. Place a peeled egg in the center and gently wrap the sausage meat completely around it, smoothing out any seams to create a perfectly sealed sphere.
Set up three shallow bowls: Bowl 1: Flour. Bowl 2: Beaten egg wash. Bowl 3: Panko breadcrumbs. Roll each sausage-wrapped egg lightly in the flour, dip completely into the egg bath, and then roll in the Panko crumbs, pressing gently to form a thick, uniform coating.
Preheat your air fryer to 190°C (375°F). Place the crusted scotch eggs inside the basket, ensuring they do not touch. Mist the surfaces generously with cooking oil spray until the crumbs look damp. Air fry for 9–10 minutes, gently rotating them at the 5-minute mark, until the outer crust is deeply golden-brown and rigid.
Carefully remove the hot scotch eggs and let them rest on a cutting board for 2 minutes to let the juices settle. Using a sharp serrated knife, slice each egg cleanly in half to reveal a perfectly cooked, savory sausage crust surrounding a luscious, warm, dripping golden yolk. Serve immediately!
