Artichoke Spin Dip Pasta
Preparation
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
- While the pasta is cooking, in a large pan over medium-low heat, add the olive oil. Add the green onions and cook in the hot oil, stirring occasionally, until soft, about 5 minutes. Add the garlic and red chili flakes; cook for 2-3 minutes, until fragrant.
- Increase heat to medium. Add the artichokes to the pan and season with salt and pepper. Cook for 1 minute. Add the spinach and cook for 2-3 minutes, until wilted. Add the Boursin and cook until the cheese is melted.
- Strain the pasta, reserving 1-2 cups pasta water.
- Add ½ cup pasta water to the artichoke-spinach mixture in the pan. Stir until the sauce is creamy. Add another ½ cup pasta water; mix well.
- Add the mozzarella cheese and butter; stir until well combined. Check for seasoning, adjusting the salt and pepper as needed. Adjust consistency with more pasta water if needed.
- Add the pasta to the pan and mix until evenly coated with the sauce.
