  • 8 oz bacon, chopped
  • 1 shallot, minced
  • ¼ teaspoon red pepper flakes
  • 3 garlic cloves, minced
  • ½ cup dry white wine
  • 2 cups heavy cream
  • 1 ½ cups gorgonzola cheese
  • ¼ cup grated parmesan cheese, plus more for serving
