Cake

- 1 stick unsalted butter, room temperature
- 1 cup granulated sugar(200 g)
- 2 teaspoons baking powder
- ½ teaspoon kosher salt
- 2 teaspoons vanilla extract
- ¼ teaspoon almond extract
- 4 large egg yolks
- 1 ½ cups all purpose flour(185 g), sifted
- ⅔ cup milk(160 mL)
- 1 oz spiced rum(30 mL), optional

- 4 large egg whites
- ¾ cup granulated sugar(150 g)
- ½ teaspoon kosher salt
- 2 sticks unsalted butter, cubed, chilled, but pliable
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
For Decorating
- 10 oz vanilla candy melts(295 g)
- 2 tablespoons green sanding sugar
- 1 tube red cookie icing
