Cut off both ends of the plantains. Use the tip of a knife to score the skin lengthwise, then peel it away. Slice the plantains diagonally into uniform 1/2-inch thick oval coins. Using plantains with plenty of black spots guarantees maximum sweetness and a perfectly soft interior.
In a medium bowl, combine the plantain coins, melted coconut oil, ground cinnamon, and a tiny pinch of salt. Toss forcefully but carefully until the spices are evenly distributed and every coin is lightly glossy.
Preheat your air fryer to 190°C (375°F). Arrange the seasoned plantain coins in a single layer in the basket, leaving a small amount of space between each piece. Air fry for 9–10 minutes, flipping them over at the 5-minute mark, until the edges are deeply golden-brown and caramelized.
