2️⃣ Cook the Chicken Until Crispy
Preheat your air fryer to 400°F (200°C).
Arrange the chicken pieces in a single layer, making sure they are not overcrowded.
Cook for 11–12 minutes, flipping halfway through cooking.
The chicken should be:
✅ Golden brown
✅ Crispy on the outside
✅ Fully cooked to an internal temperature of 165°F (74°C)
Transfer to a bowl and loosely cover with foil to keep warm.
No Air Fryer?
Cook the chicken in a large skillet over medium-high heat for 6–8 minutes, turning occasionally until golden and fully cooked.
3️⃣ Scramble the Eggs
Heat 1 tablespoon sesame oil in a large skillet or wok over high heat.
Pour in the beaten eggs and sprinkle with the salt.
Cook gently while stirring until soft fluffy curds form.
Avoid overcooking—the eggs will cook a bit more later.
Transfer to a plate and set aside.
🥚 Soft eggs add authentic fried rice texture.
4️⃣ Sauté the Vegetables
Reduce heat to medium-high.
Add the remaining 1 tablespoon sesame oil to the skillet.
