In a small skillet over medium heat, melt the butter and add the finely diced apples, brown sugar, cinnamon, and nutmeg. Stir in the cornstarch slurry and simmer for 1 more minute until the liquid thickens into a glossy, tight glaze. Remove from heat and let cool slightly.
Lay an egg roll wrapper flat like a diamond. Spoon 2 tablespoons of the apple filling across the lower center.
