Drain the halloumi block and pat it thoroughly dry with paper towels. Cut the block in half, then slice it into uniform batons about the size of thick-cut French fries. Drying the cheese completely is essential to prevent it from releasing too much water during cooking.
In a medium bowl, whisk together the flour (or cornstarch), smoked paprika, and garlic powder. Toss the halloumi batons gently in the mixture until lightly coated, then shake off any excess flour.
Preheat your air fryer to 200°C (400°F). Drizzle the olive oil over the batons and toss quickly to coat. Arrange them in a single layer in the air fryer basket, leaving space between each fry. Air fry for 7–8 minutes, flipping them halfway through, until the exterior is deeply golden and rigid.
Remove the fries while they are blistering hot. Pile them onto a plate, drizzle the warm honey-harissa glaze generously over the top, and garnish with fresh mint leaves if desired. Eat them immediately while perfectly crisp!
