🧀 Crispy Fried Mozzarella Mac & Cheese Balls 🍝

The ultimate comfort-food fusion! Leftover, creamy macaroni and cheese is stuffed with a pocket of gooey mozzarella, rolled into bite-sized spheres, coated in a seasoned Panko crust, and fried until shatteringly crisp on the outside and wonderfully molten on the inside. 😋✨

  • ⏱️ Prep Time: 20 minutes (plus 30 minutes chilling time)

  • 🍳 Cook Time: 10 minutes

  • 🍽️ Servings: 4-6 servings (makes about 12-14 balls)

🛒 Ingredients

  • 3 cups prepared macaroni and cheese (cooled and chilled in the fridge so it’s firm) 🍝

  • 12-14 small cubes of mozzarella cheese 🧀

  • 1/2 cup all-purpose flour 🌾

  • 2 large eggs (beaten) 🥚

  • 2 cups Panko breadcrumbs 🍞

  • 1 teaspoon garlic powder 🧄

  • 1 teaspoon Italian seasoning 🌿

  • Salt and black pepper to taste 🧂

  • Vegetable oil (for frying) 🛢️

  • Warm marinara sauce (for serving) 🍅

👩‍🍳 Detailed Instructions

  1. Shape and Stuff: 👩‍🍳 Take about 1/4 cup of the cold, firm mac and cheese and press it flat into the palm of your hand. Place a cube of mozzarella cheese right in the center. Carefully fold the pasta around the cheese, squeezing firmly to shape it into a tight, smooth ball. Ensure no mozzarella is exposed.

  2. Freeze to Set: ❄️ Place the shaped balls on a tray lined with parchment paper. Freeze them for 20-30 minutes. This step is absolutely crucial to prevent the balls from breaking apart or melting in the hot oil.

  3. Set Up the Breading Line: 🥣 Arrange three shallow bowls side-by-side:

    • Bowl 1: All-purpose flour mixed with a pinch of salt and pepper.

    • Bowl 2: Beaten eggs.

    • Bowl 3: Panko breadcrumbs tossed with garlic powder and Italian seasoning.

  4. Dredge and Coat: 🥖 Roll each chilled mac and cheese ball in the flour, dip it thoroughly into the egg wash, and then coat it generously in the seasoned Panko crumbs. For an extra sturdy crust, dip it back into the egg and back into the Panko a second time.

  5. Fry to Melty Perfection: 🛢️ Heat about 2 inches of vegetable oil in a deep skillet or pot to 180°C (350°F). Fry the balls in small batches for 3-4 minutes, turning occasionally, until they are deep golden brown and exceptionally crunchy. Drain on paper towels and serve immediately with a side of warm marinara sauce!
